Barley Swine is a reservation-only tasting menu restaurant opened in 2010 by born-and-raised Austinite Chef Bryce Gilmore. The multi-course menu changes continuously based on ingredient availability and the creative direction of Gilmore and his team of chefs. Dishes lean into bold flavors and draw from a wide network of regional farmers and ranchers. The restaurant is a petite space with limited seating, and holds a Michelin recognition. Optional beverage pairings are available, and vegetarian, pescatarian, and gluten-free menus can be accommodated upon request. Barley Swine has two sister restaurants: Odd Duck and Sour Duck Market.
Barley Swine was founded with a stated commitment to supporting regional farmers and ranchers, and the restaurant works with a named roster of local and central Texas producers including B5 Farms, Boggy Creek Farm, Richardson Farms, Barton Springs Mill, and many others. In 2023, Chef Bryce Gilmore co-founded River Field Farm in Dale, Texas alongside Farmer Phil Green. The farm grows everything from seed, plants and harvests by hand, and practices organic techniques on just over an acre of land. One hundred percent of what is grown at River Field Farm is intended to supply Barley Swine and its sister restaurants, and seasonal vegetables from the farm appear on the Barley Swine menu. The menu also features 30+ day dry-aged Akaushi ribeye, sourced and carved in-house.
