Stryk Jersey Farm

Family-run Jersey dairy farm selling raw milk, cheddar cheese, curds, sour cream, and grass-fed beef on the farm.

Stryk Jersey Farm is a family-run dairy farm founded in the 1940s, now operated by Bob and Darlene Stryk. Bob holds a Dairy Science degree from Texas A&M University and took over operations in 1980. The farm raises a registered, purebred Jersey herd and produces raw whole milk, buttermilk, cheddar cheese, cheese curds, and sour cream on site under the Strykly Texas Cheese brand. Grass-fed beef from their commercial cattle herd is also available when in stock. Visitors are welcome to come to the farm to purchase products directly. Bob received the Raw Milk Farmer of the Year Award from the Weston A. Price Foundation in 2020, and the farm was named 2025 Premier Breeder and Premier Exhibitor at the Houston Livestock Show.

The farm holds a Grade A Raw for Retail Milk Permit issued by the Texas Department of State Health Services, obtained in 2005, which carries stricter criteria than a standard producer dairy permit. Milk comes from pasture-raised, grass-fed Jersey cows and is sold without homogenization or pasteurization. The farm has maintained Grade A status since the 1950s. Bob and Darlene practice rotational grazing and focus on soil health and water management as the foundation of their grass-fed milk and cheese production. They work in partnership with the USDA Natural Resources Conservation Service and their local Soil and Water Conservation District on sustainability across the farm. Bob also worked with the Texas legislature to modify raw milk regulations to improve consumer access to fresh milk.
