Intero is a farm-to-table Italian restaurant opened in 2018 by chef/owners Ian Thurwachter and Krystal Craig, who bring over 35 years of combined experience in food and restaurants. The menu draws on traditional Italian techniques and cooking sensibilities, applied to seasonal Texas ingredients. Because menu availability follows both seasonal produce and the varying yields of whole-animal butchery, dishes change regularly. On the sweet side, Intero offers house-made chocolates — including truffles, barks, and sipping chocolate — alongside traditional Italian desserts in classic, seasonal, and unique flavors. The restaurant also features an extensive amaro collection, select wines, and craft cocktails, with seating available indoors and outdoors.
Intero sources exclusively local meats and produce from ranches and farms across Texas. The kitchen runs an in-house whole-animal butchery program, and creative use of every part of an ingredient drives a stated goal of zero-waste. The menu changes continuously based on seasonal ingredient availability and the cuts yielded through that butchery program. Co-owner and pastry chef Krystal Craig built her chocolate work on small-batch chocolates made from sustainable, organic ingredients. Supporting local producers and reinvesting in the local economy is an explicit part of the restaurant's operating philosophy.
