L'Oca d'Oro is an Italian-inspired neighborhood restaurant co-founded in 2016 by Chef Fiore Tedesco and Adam Orman. The kitchen makes everything in-house, including pasta, cheese, salumi, bread, vinegars, and liqueurs. We offer an à la carte menu as well as a seasonally changing four-course Menu Fisso, and host a Pay What You Will three-course dinner every Tuesday to make the experience accessible to more people. Fiore's Regional Pasta Club is a subscription program that takes members on a tour of cities and countries Chef Fiore has traveled to, featuring different pasta and noodle dishes from each destination along with stories and recipes. We also run Pasta Paisanos, a recurring collaborative dinner series where Chef Fiore cooks alongside invited chefs, with proceeds benefiting local organizations.

All dishes are prepared with sustainable, locally grown produce and meats, a farm-to-table approach that extends to in-house pasta, cheese, salumi, bread, vinegars, and liqueurs. Chef Tedesco has noted that the vast majority of ingredients come from Central Texas farms, with imported Italian cheeses among the few exceptions. The seasonal menu changes to reflect what Central Texas offers. On the staffing side, a 20% pre-tax service charge is added to all checks to guarantee team members a base wage of at least $17 per hour, along with Direct Primary Care, PTO, and low-cost counseling. Co-owners Tedesco and Orman also co-founded Good Work Austin in 2019, an organization focused on equitable practices across the local food and beverage industry.
