Mill-King Market and Creamery is a third-generation family dairy farm and on-farm processing operation. The Miller family has been dairy farming since 1941 and in 2011 installed their own pasteurizer to process and sell milk directly. Their products include low-temperature pasteurized, non-homogenized milk, cream, and artisan cheese with no additives. The on-farm retail store, Mill-King Market, also carries local eggs, pork, chicken, and allergen-free household staples. Mill-King milk is used by restaurants, coffee shops, and artisan ice cream and cheesemakers across Texas.
Milk is batch pasteurized at 145 degrees for 30 minutes using a vat/low-temperature method, which is slower and gentler than conventional high-heat pasteurization. The milk is not homogenized, so cream rises to the top. No powdered milk, preservatives, emulsifiers, water, cleaning agents, brighteners, hormones, or other additives are used in any products. Cows are grass-fed and pasture-raised, spending the majority of their days in grazing fields. When supplementation is needed, the diet is forage-based; grain such as corn, soy, or cottonseed is not fed. A bovine nutritionist tests the grass and forage as well as the cows themselves. Cows are never given artificial hormones to increase production. The herd is made up of Holstein, Brown Swiss, and Jersey breeds, and all replacements are raised on the farm. Mill-King follows organic standards and practices but is not certified; all feed is stated to be GMO-free.
